Dr Mori studied Holder pasteurisation's effects on human milk, revealing altered molecular bonds, peptide and fatty acid composition, protein functionality, and antioxidant capacity. The process also promoted beneficial intestinal bacteria growth and metabolites, highlighting both advantages and drawbacks. These findings provide insights to optimise human milk banking methods.<p></p>
